How to make it
- Deseed and dice the tomatoes, pit and halve the olives, finely chop the red onion and crumble the feta into rough pieces.
- Warm 1 tablespoon of the olive oil in a large non-stick pan over medium heat and soften the onion for 2 minutes, then add the tomatoes and cook another 3 minutes until any watery liquid has cooked off.
- Beat the eggs with the milk, a little salt remembering the feta is salty, and plenty of black pepper.
- Add the remaining oil to the pan, pour in the eggs and let them set at the edges before gently dragging the curds toward the centre with a spatula.
- When the eggs are still slightly wet on top, scatter over the feta, olives, oregano and parsley, then fold the omelet in half or leave it open-faced.
- Cook one more minute until the eggs are just set with no runny liquid, then slide onto plates and finish with a drizzle of olive oil.
