How to make it
- Core and dice the tomatoes into small pieces, toss them with a pinch of salt, and set in a sieve over a bowl for 10 minutes so excess juice drains and the topping stays crisp.
- Combine the drained tomatoes with two tablespoons of olive oil, the vinegar, torn basil, salt and pepper, and let the mixture sit so the flavours mingle while you prepare the bread.
- Toast or grill the bread slices until golden and crisp on both sides but still slightly chewy inside.
- While the toast is hot, rub one side of each slice with a halved clove of raw garlic so it perfumes the surface, then drizzle lightly with the remaining olive oil.
