How to make it
- Shuck the corn and pat the ears dry, then heat a grill or grill pan to medium-high.
- Grill the corn, turning every couple of minutes, for about 10 to 12 minutes until kernels are charred in spots and tender.
- Meanwhile stir together the mayonnaise, crema and grated garlic into a smooth, spreadable sauce.
- Slather the warm grilled corn all over with the mayo-crema mixture so it clings to every kernel.
- Crumble the cotija generously over each ear, pressing lightly so it sticks, then dust with chili powder.
- Finish with a squeeze of lime, a scatter of chopped cilantro and a pinch of salt, and serve at once on the cob with extra lime wedges.
