How to make it

  1. Grate the onion and squeeze out the excess liquid, then place it in a large bowl with the minced garlic and finely chopped parsley.
  2. Add the ground meat, cumin, coriander, allspice, cinnamon, cayenne and a generous teaspoon of salt with black pepper to the bowl.
  3. Knead the mixture firmly with your hands for 3 to 4 minutes until it becomes sticky and well bound, which helps the kofta hold its shape on the skewer.
  4. Cover and chill the mixture for at least 30 minutes, then divide into 8 portions and mould each tightly around a skewer into a long sausage shape, brushing lightly with olive oil.
  5. Heat a grill or griddle to medium-high and cook the kofta for about 4 minutes per side, turning until evenly charred and cooked through to an internal temperature of 71C.
  6. Rest the skewers for a couple of minutes, then serve with flatbread, a squeeze of lemon and a yogurt or tahini sauce.
