Kofta

How to make it
- Grate the onion and squeeze out the excess liquid, then place it in a large bowl with the minced garlic and finely chopped parsley.
- Add the ground meat, cumin, coriander, allspice, cinnamon, cayenne and a generous teaspoon of salt with black pepper to the bowl.
- Knead the mixture firmly with your hands for 3 to 4 minutes until it becomes sticky and well bound, which helps the kofta hold its shape on the skewer.
- Cover and chill the mixture for at least 30 minutes, then divide into 8 portions and mould each tightly around a skewer into a long sausage shape, brushing lightly with olive oil.
- Heat a grill or griddle to medium-high and cook the kofta for about 4 minutes per side, turning until evenly charred and cooked through to an internal temperature of 71C.
- Rest the skewers for a couple of minutes, then serve with flatbread, a squeeze of lemon and a yogurt or tahini sauce.
