How to make it

  1. Heat the vegetable oil in a large frying pan or wide saucepan over medium heat, then add the diced onion and cook for 4 to 5 minutes until softened and translucent.
  2. Stir in the minced garlic and cook for a further minute until fragrant, taking care not to let it brown and turn bitter.
  3. Add the ground turkey breast and break it up with a wooden spoon, cooking for 7 to 9 minutes until no pink remains and it reaches an internal temperature of 74 C (165 F).
  4. Sprinkle in the cumin, smoked paprika, salt and pepper, stirring so the spices coat the meat and toast briefly in the pan.
  5. Pour in the canned diced tomatoes with green chiles along with their juice and the teriyaki sauce, then simmer for 5 minutes to meld the flavours.
  6. Fold the cooked brown rice through the turkey mixture and cook for another 2 to 3 minutes, stirring, until everything is hot throughout.
  7. Taste and adjust the seasoning, then serve hot, garnished with fresh coriander or sliced spring onion if desired.
