How to make it

  1. Dice the onion, slice the carrots and celery, and mince the garlic. Heat the oil in a large pot over medium heat and cook the onion, carrots, and celery for 6 to 7 minutes until softened.
  2. Stir in the garlic, thyme, and bay leaf and cook for 1 minute until fragrant.
  3. Pour in the chicken broth, season lightly with salt and pepper, and bring to a gentle boil.
  4. Add the whole chicken breasts, lower to a simmer, and poach for 15 to 18 minutes until cooked through and an internal temperature of 74 C (165 F) is reached.
  5. Remove the chicken to a plate, let it rest briefly, then shred it into bite-sized pieces with two forks.
  6. Return the broth to a boil, add the egg noodles, and cook for 6 to 8 minutes until tender, then stir the shredded chicken back in to heat through.
  7. Remove the bay leaf, stir in the parsley, taste and adjust the seasoning, and serve hot.
