How to make it

  1. Pour the chicken broth into a saucepan, stir in the saffron powder, and keep it at a gentle simmer on a back burner throughout cooking.
  2. Heat the olive oil in a wide heavy pan over medium heat and cook the finely chopped onion for about 5 minutes until soft and translucent but not browned.
  3. Add the rice and stir for 1 to 2 minutes until the grains are coated and the edges turn slightly translucent.
  4. Pour in the white wine and stir until it has almost completely evaporated.
  5. Add the hot saffron broth one ladleful at a time, stirring frequently and waiting until each addition is nearly absorbed before adding the next.
  6. Continue for about 18 to 20 minutes until the rice is creamy and tender with a slight bite at the centre, adjusting the heat so it simmers steadily.
  7. Remove the pan from the heat, beat in the butter and parmesan, season with salt, then cover and rest for 2 minutes before serving immediately.
