Risotto II

How to make it
- Pour the chicken broth into a saucepan, stir in the saffron powder, and keep it at a gentle simmer on a back burner throughout cooking.
- Heat the olive oil in a wide heavy pan over medium heat and cook the finely chopped onion for about 5 minutes until soft and translucent but not browned.
- Add the rice and stir for 1 to 2 minutes until the grains are coated and the edges turn slightly translucent.
- Pour in the white wine and stir until it has almost completely evaporated.
- Add the hot saffron broth one ladleful at a time, stirring frequently and waiting until each addition is nearly absorbed before adding the next.
- Continue for about 18 to 20 minutes until the rice is creamy and tender with a slight bite at the centre, adjusting the heat so it simmers steadily.
- Remove the pan from the heat, beat in the butter and parmesan, season with salt, then cover and rest for 2 minutes before serving immediately.
