How to make it

  1. Heat the olive oil in a large pot over medium heat and cook the onion, carrots and celery for 6 to 8 minutes until softened.
  2. Stir in the garlic and cumin and cook for 1 minute until fragrant.
  3. Add the rinsed red lentils, chopped tomatoes, stock and bay leaf, then bring to a boil.
  4. Reduce the heat to low, cover partially and simmer for 25 to 30 minutes until the lentils are completely tender and beginning to break down, stirring occasionally.
  5. Remove the bay leaf, then blend about half the soup with an immersion blender for a thicker, partly smooth texture, or leave it chunky if you prefer.
  6. Stir in the lemon juice and season generously with salt and pepper, adding a little more stock or water if the soup is too thick.
  7. Ladle into bowls and serve hot, with a drizzle of olive oil and crusty bread on the side.
