How to make it
- Heat the olive oil in a large pot over medium heat and cook the onion, carrots and celery for 6 to 8 minutes until softened.
- Stir in the garlic and cumin and cook for 1 minute until fragrant.
- Add the rinsed red lentils, chopped tomatoes, stock and bay leaf, then bring to a boil.
- Reduce the heat to low, cover partially and simmer for 25 to 30 minutes until the lentils are completely tender and beginning to break down, stirring occasionally.
- Remove the bay leaf, then blend about half the soup with an immersion blender for a thicker, partly smooth texture, or leave it chunky if you prefer.
- Stir in the lemon juice and season generously with salt and pepper, adding a little more stock or water if the soup is too thick.
- Ladle into bowls and serve hot, with a drizzle of olive oil and crusty bread on the side.
