How to make it

  1. Heat the oven to 190 C (375 F). Finely chop the dried apple rings and mix them in a bowl with the crumbled cornbread, dried cranberries, softened cream cheese and 1 tablespoon of the apple jelly to make a moist stuffing. Season with a little salt and pepper.
  2. Lay each chicken breast flat and cut a deep horizontal pocket into the thick side, taking care not to slice all the way through.
  3. Season the breasts inside and out, then spoon the stuffing into each pocket, pressing it in and securing the opening with a cocktail stick if needed.
  4. Heat the olive oil in an ovenproof skillet over medium-high heat and sear the chicken for 2 to 3 minutes on each side until lightly golden.
  5. Warm the remaining apple jelly until liquid and brush it over the tops of the breasts for a glaze.
  6. Transfer the skillet to the oven and roast for 20 to 25 minutes, until the chicken is cooked through and reaches an internal temperature of 74 C (165 F) at the thickest part.
  7. Rest the chicken for 5 minutes, remove any cocktail sticks, and serve.
