Cheese-Stuffed Chicken Breasts

How to make it
- Heat the oven to 190 C (375 F). Finely chop the dried apple rings and mix them in a bowl with the crumbled cornbread, dried cranberries, softened cream cheese and 1 tablespoon of the apple jelly to make a moist stuffing. Season with a little salt and pepper.
- Lay each chicken breast flat and cut a deep horizontal pocket into the thick side, taking care not to slice all the way through.
- Season the breasts inside and out, then spoon the stuffing into each pocket, pressing it in and securing the opening with a cocktail stick if needed.
- Heat the olive oil in an ovenproof skillet over medium-high heat and sear the chicken for 2 to 3 minutes on each side until lightly golden.
- Warm the remaining apple jelly until liquid and brush it over the tops of the breasts for a glaze.
- Transfer the skillet to the oven and roast for 20 to 25 minutes, until the chicken is cooked through and reaches an internal temperature of 74 C (165 F) at the thickest part.
- Rest the chicken for 5 minutes, remove any cocktail sticks, and serve.
