Chicken Bog I

This chicken builds bone-in chicken (fat hen pieces), uncooked long grain white rice and bacon, chopped into a weeknight-friendly meal you can have ready in about 65 minutes. How to make it
- Place the chicken pieces in a large pot, cover with the water, add the chopped onion and a pinch of the salt, then bring to a boil and simmer gently for about 40 minutes until the chicken is very tender and cooked through to at least 74 C (165 F).
- Remove the chicken and let it cool slightly, reserving the cooking broth; pull the meat from the bones, discard the skin and bones, and shred the meat into bite-size pieces.
- In the same pot, fry the chopped bacon over medium heat until the fat renders and the pieces crisp, then add the butter and chopped green bell pepper and cook for 3 minutes.
- Measure the reserved broth and top up with water to make about 750 ml, then return it to the pot and bring to a boil.
- Stir in the rice and the shredded chicken, season with the remaining salt and the black pepper, and return to a gentle boil.
- Reduce the heat to low, cover tightly, and cook for about 20 minutes until the rice is tender and has absorbed the liquid, ensuring the chicken is heated through to at least 74 C (165 F).
- Remove from the heat, let stand covered for 5 minutes, then fluff with a fork and serve hot in four bowls.
