How to make it
- Melt the butter in a large pot over medium heat, then saute the minced garlic and diced onion until soft and fragrant, about 3 minutes.
- Add the chicken pieces and cook, stirring, until they lose their pink color on the outside.
- Pour in the water or stock, bring to a boil, then lower the heat and simmer for about 20 minutes until the chicken is tender and cooked through to an internal temperature of 74 C (165 F).
- Lift out the chicken, shred or dice it, and return it to the pot, then add the diced carrot and simmer for 5 minutes.
- Stir in the elbow macaroni and cook until tender, about 8 to 10 minutes, adding a little more water if the soup becomes too thick.
- Add the shredded cabbage and the evaporated milk, then simmer gently for 3 to 4 minutes until the cabbage is just wilted.
- Season with salt and black pepper to taste and serve hot.
