How to make it
- Place the chicken thighs in a large pot with the chicken stock, water, and bay leaf, then bring to a boil over high heat.
- Reduce the heat to a gentle simmer and skim off any foam that rises to the surface, then cook for 20 minutes.
- Add the diced onion, sliced carrots, and celery, and continue simmering for another 20 minutes until the vegetables are tender and the chicken is cooked through to an internal temperature of 74 C (165 F).
- Remove the chicken thighs and bay leaf, let the chicken cool slightly, then pull the meat from the bones, shred or chop it, and discard the bones.
- Return the shredded chicken to the pot and season with salt and pepper to taste.
- Stir in the fresh dill, simmer for 2 more minutes, then ladle into bowls and serve hot.
