How to make it

  1. Cut the chicken into bite-sized pieces, toss with the beaten egg, then dredge thoroughly in the 5 tablespoons of cornstarch so each piece is dry-coated.
  2. Heat the frying oil to 175 C and fry the chicken in batches for about 5 minutes until golden and cooked through to 74 C inside, then drain; for extra crunch re-fry for 1 minute.
  3. In a clean wok combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger and water and bring to a gentle simmer.
  4. Stir in the cornstarch slurry and cook for 1 minute until the sauce turns glossy and thick enough to coat a spoon.
  5. Add the fried chicken and toss quickly over the heat so every piece is lacquered in the sweet sesame sauce.
  6. Sprinkle generously with toasted sesame seeds and serve immediately over steamed rice.
