How to make it

  1. Cut the chicken breasts into large bite-sized chunks and pat them dry, then season all over with salt and pepper.
  2. Heat 2 tablespoons of the olive oil in a wide pan over medium-high heat and brown the chicken on all sides for about 5 minutes, then remove it to a plate.
  3. Lower the heat to medium, add the remaining oil, and cook the finely chopped onion for 5 minutes until soft, then stir in the minced garlic and the ground cinnamon and cook for 30 seconds until fragrant.
  4. Add the whole peeled tomatoes, crushing them with a spoon, along with the sugar and a splash of white wine vinegar, and simmer for 8 to 10 minutes until the sauce thickens.
  5. Peel and dice the peach, return the chicken and its juices to the pan, and fold in the peach pieces.
  6. Cover and simmer gently for 12 to 15 minutes until the chicken is cooked through and reaches an internal temperature of 75 C (165 F) with no pink remaining.
  7. Taste and adjust the seasoning, then rest for a couple of minutes before serving over rice or with crusty bread.
