Cinnamon Chicken

How to make it
- Cut the chicken breasts into large bite-sized chunks and pat them dry, then season all over with salt and pepper.
- Heat 2 tablespoons of the olive oil in a wide pan over medium-high heat and brown the chicken on all sides for about 5 minutes, then remove it to a plate.
- Lower the heat to medium, add the remaining oil, and cook the finely chopped onion for 5 minutes until soft, then stir in the minced garlic and the ground cinnamon and cook for 30 seconds until fragrant.
- Add the whole peeled tomatoes, crushing them with a spoon, along with the sugar and a splash of white wine vinegar, and simmer for 8 to 10 minutes until the sauce thickens.
- Peel and dice the peach, return the chicken and its juices to the pan, and fold in the peach pieces.
- Cover and simmer gently for 12 to 15 minutes until the chicken is cooked through and reaches an internal temperature of 75 C (165 F) with no pink remaining.
- Taste and adjust the seasoning, then rest for a couple of minutes before serving over rice or with crusty bread.
