How to make it

  1. Pat the fish fillets dry, season both sides lightly with salt and pepper, then place them in a shallow dish and pour the Italian dressing over to coat; cover and marinate in the refrigerator for 20 to 30 minutes.
  2. Crumble the corn muffins into fine crumbs in a wide bowl, either by hand or by pulsing them in a food processor, and spread the flour on a separate plate.
  3. Beat the egg in a shallow bowl with a tablespoon of water until smooth to make a light wash.
  4. Lift each fillet from the marinade and let the excess drip off, then dredge it lightly in the flour, dip it into the beaten egg, and press it firmly into the corn muffin crumbs so the whole surface is coated.
  5. Heat the oil in a large skillet over medium heat until it shimmers, then add the fillets in a single layer without crowding the pan.
  6. Fry for about 3 to 4 minutes per side, turning once, until the crust is golden brown and crisp and the fish flakes easily with a fork and reaches an internal temperature of 63 C (145 F).
  7. Transfer the fish to a paper-towel-lined plate to drain briefly, then serve hot with lemon wedges for squeezing over the top.
