Sesame Shrimp Toast

If you've got fresh uncooked large shrimp, peeled and deveined, white sandwich bread and white sesame seeds, you're most of the way to this seafood: about 70 minutes of cooking across 7 steps. You'll find the full ingredient list (with a scaler to change the servings), 7 steps of method, substitutions, and ideas for what to serve alongside.

You'll mainly reach for frying pan / skillet and pan. At medium difficulty across 7 steps, it's manageable with a little attention. As written, it's pescatarian β€” fish but no meat.

How to make it

  1. Pat the shrimp very dry, then pulse them in a food processor (or finely chop and mash by hand) with the egg white, cornstarch, finely grated ginger, sesame oil, salt and white pepper until you have a sticky, slightly chunky paste; finely slice the green onion and fold it through.
  2. Trim the crusts from the bread and spread a thick, even layer of the shrimp paste over one side of each slice, mounding it slightly toward the centre and smoothing the surface with a wetted spoon.
  3. Scatter the sesame seeds generously over the shrimp-coated side, pressing them in gently so they adhere, then cut each slice diagonally into four triangles.
  4. Heat the oil in a wide pan to about 170 C, hot enough that a corner of bread sizzles steadily but does not brown instantly.
  5. Lower the triangles in a few at a time, shrimp side down first, and fry for about 1 to 2 minutes until the topping is set and golden, then flip and fry the bread side for another minute until evenly golden brown.
  6. Make sure the shrimp layer is opaque and cooked through; the shrimp should reach at least 63 C (145 F) and look firm and white with no translucent grey patches.
  7. Drain the toasts on paper towels and serve immediately while crisp, with sweet chili sauce or a soy dipping sauce alongside.
