Sesame Shrimp Toast

How to make it
- Pat the shrimp very dry, then pulse them in a food processor (or finely chop and mash by hand) with the egg white, cornstarch, finely grated ginger, sesame oil, salt and white pepper until you have a sticky, slightly chunky paste; finely slice the green onion and fold it through.
- Trim the crusts from the bread and spread a thick, even layer of the shrimp paste over one side of each slice, mounding it slightly toward the centre and smoothing the surface with a wetted spoon.
- Scatter the sesame seeds generously over the shrimp-coated side, pressing them in gently so they adhere, then cut each slice diagonally into four triangles.
- Heat the oil in a wide pan to about 170 C, hot enough that a corner of bread sizzles steadily but does not brown instantly.
- Lower the triangles in a few at a time, shrimp side down first, and fry for about 1 to 2 minutes until the topping is set and golden, then flip and fry the bread side for another minute until evenly golden brown.
- Make sure the shrimp layer is opaque and cooked through; the shrimp should reach at least 63 C (145 F) and look firm and white with no translucent grey patches.
- Drain the toasts on paper towels and serve immediately while crisp, with sweet chili sauce or a soy dipping sauce alongside.
