Plantain Nuggets

How to make it
- Bring a small pot of lightly salted water to a boil and poach the fish fillet for 6 to 8 minutes until it flakes easily and reaches an internal temperature of 63°C (145°F), then drain, cool slightly and flake finely, removing any bones.
- Peel the ripe plantains, cut them into chunks and mash them in a bowl with a fork until mostly smooth but still slightly textured.
- Stir the flaked fish, curry powder, thyme, sugar, crumbled seasoning cube and a little salt into the mashed plantain until evenly combined.
- Add the flour a spoonful at a time, mixing until the batter holds together and is firm enough to drop from a spoon without spreading; add a touch more flour if it feels too wet.
- Heat the oil in a deep pan to about 175°C (350°F), or until a small drop of batter sizzles and rises quickly to the surface.
- Carefully drop heaped teaspoons of the batter into the hot oil in batches, frying for 3 to 4 minutes and turning so they brown evenly on all sides without crowding the pan.
- Lift the nuggets out with a slotted spoon, drain on paper towels and serve warm with a dipping sauce of your choice.
