How to make it

  1. Core the tomatoes and cut them into small even dice, then place them in a large mixing bowl.
  2. Peel the cucumber if the skin is thick, then dice it to a similar size as the tomatoes and add it to the bowl.
  3. Add the thinly sliced red onion along with the chopped parsley and mint.
