Egyptian Tomato Salad

How to make it
- Core the tomatoes and cut them into small even dice, then place them in a large mixing bowl.
- Peel the cucumber if the skin is thick, then dice it to a similar size as the tomatoes and add it to the bowl.
- Add the thinly sliced red onion along with the chopped parsley and mint.
- In a small bowl, whisk together the lemon juice, olive oil, ground cumin and a generous pinch of salt to make the dressing.
- Pour the dressing over the vegetables and toss gently until everything is evenly coated.
- Let the salad rest for 10 minutes at room temperature so the flavours mingle and the onion softens slightly.
- Taste, adjust the salt and lemon, and serve fresh as a side dish or with flatbread.
