Tahini Cookies

How to make it
- Preheat the oven to 175 C and line a baking sheet with parchment paper.
- In a mixing bowl, stir the tahini and honey together until smooth and glossy, then beat in the vanilla extract and salt.
- Add the ground cinnamon, quick-cooking oats and chopped walnuts, folding until you have a thick, sticky dough; if it feels too loose, let it rest for 5 minutes so the oats absorb moisture.
- Scoop rounded tablespoons of dough, roll each into a ball and place them about 5 cm apart on the prepared sheet, then gently flatten each with the back of a spoon.
- Bake for 10 to 12 minutes until the edges are golden and set; the centres will still be soft.
- Let the cookies cool on the sheet for 10 minutes to firm up before transferring them to a rack, as they are fragile while warm.
