How to make it
- Place the eggs in a single layer in a saucepan, cover them with cold water by about an inch, and bring to a rolling boil over high heat.
- As soon as the water boils, cover the pan, remove it from the heat, and let the eggs sit for 12 minutes to cook through safely.
- Drain the eggs and transfer them to a bowl of iced water to cool for several minutes, which also makes them easier to peel.
- Peel the eggs, slice each in half lengthwise, and gently pop the yolks into a bowl, arranging the whites on a serving plate.
- Mash the yolks with a fork until crumbly, then mix in the mayonnaise, mustard, vinegar, sugar, salt and pepper until the filling is smooth and creamy.
- Spoon or pipe the filling back into the hollow of each egg white, dust the tops with paprika, and chill until ready to serve.
