How to make it
- Preheat the oven to 160C (325F) and lightly grease a 15cm springform tin.
- Melt the butter and stir it into the crushed chocolate wafers, then press the mixture firmly into the base of the tin and chill while you make the filling.
- Melt the semi-sweet chocolate gently over a pan of barely simmering water or in short bursts in the microwave, then set it aside to cool slightly.
- Beat the softened cream cheese with the sugar, flour and cocoa powder until completely smooth, then mix in the vanilla, the melted chocolate and the milk.
- Add the eggs one at a time, beating on low speed only until each is just incorporated to avoid whipping in too much air, which can crack the cake.
- Pour the filling over the chilled base, smooth the top, and bake for 35 to 45 minutes until the edges are set but the centre still has a slight wobble.
- Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour, then refrigerate for at least 4 hours or overnight before releasing the tin and serving.
