Goat Cheese Cakes

How to make it
- Preheat the oven to 190 C / 375 F and lightly butter four ramekins or the cups of a muffin tin.
- Sweat the minced shallot and garlic in the butter over low heat until soft and fragrant but not browned, then let cool.
- In a bowl, beat together the goat cheese, garlic and herb cream cheese and ricotta until smooth and creamy.
- Mix in the cooled shallot and garlic, the minced chives and thyme, the egg, salt and pepper until evenly combined.
- Fold in the breadcrumbs to lightly bind the mixture, then divide it among the prepared ramekins and smooth the tops.
- Bake for 18 to 22 minutes until the cakes are set, puffed and lightly golden on top and reach at least 71 C / 160 F in the centre because they contain egg.
- Let the goat cheese cakes rest for 5 minutes, then run a knife around the edges, turn out and serve warm with salad leaves.
