How to make it

  1. Preheat the oven to 190 C / 375 F and lightly butter four ramekins or the cups of a muffin tin.
  2. Sweat the minced shallot and garlic in the butter over low heat until soft and fragrant but not browned, then let cool.
  3. In a bowl, beat together the goat cheese, garlic and herb cream cheese and ricotta until smooth and creamy.
  4. Mix in the cooled shallot and garlic, the minced chives and thyme, the egg, salt and pepper until evenly combined.
  5. Fold in the breadcrumbs to lightly bind the mixture, then divide it among the prepared ramekins and smooth the tops.
  6. Bake for 18 to 22 minutes until the cakes are set, puffed and lightly golden on top and reach at least 71 C / 160 F in the centre because they contain egg.
  7. Let the goat cheese cakes rest for 5 minutes, then run a knife around the edges, turn out and serve warm with salad leaves.
