How to make it

  1. Stir the yeast and sugar into the warm water and let it stand for about 10 minutes until foamy on the surface.
  2. Whisk the flour and salt in a large bowl, pour in the yeast mixture, and beat into a smooth, thick, sticky batter, then cover and leave in a warm spot for 1 to 1.5 hours until bubbly and doubled.
  3. Warm the honey gently with a splash of water until pourable and runny, then set it aside to keep warm.
  4. Heat the frying oil to 170°C, then scoop up batter with a wet spoon or squeeze small portions from a wet hand and drop walnut-sized balls carefully into the oil.
  5. Fry in batches for 2 to 3 minutes, turning so they puff and color evenly to deep golden brown, then lift out with a slotted spoon and drain on paper towels.
  6. Pile the hot loukoumades onto a platter, drizzle generously with the warm honey, and finish with a heavy dusting of cinnamon and the chopped walnuts before serving at once.
