How to make it
- Stir the yeast and sugar into the warm water and let it stand for about 10 minutes until foamy on the surface.
- Whisk the flour and salt in a large bowl, pour in the yeast mixture, and beat into a smooth, thick, sticky batter, then cover and leave in a warm spot for 1 to 1.5 hours until bubbly and doubled.
- Warm the honey gently with a splash of water until pourable and runny, then set it aside to keep warm.
- Heat the frying oil to 170°C, then scoop up batter with a wet spoon or squeeze small portions from a wet hand and drop walnut-sized balls carefully into the oil.
- Fry in batches for 2 to 3 minutes, turning so they puff and color evenly to deep golden brown, then lift out with a slotted spoon and drain on paper towels.
- Pile the hot loukoumades onto a platter, drizzle generously with the warm honey, and finish with a heavy dusting of cinnamon and the chopped walnuts before serving at once.
