Tiropita

How to make it
- Thaw the phyllo at room temperature while you make the filling, and melt the butter with the olive oil in a small pan, then set aside to brush the pastry.
- Crumble the feta into a bowl, mash in the ricotta with a fork, then beat in the eggs, finely chopped spring onions, dill, nutmeg and a generous grind of pepper until the mixture is creamy and well combined.
- Lay one sheet of phyllo on the work surface, brush it lightly all over with the melted butter mixture, then stack a second buttered sheet on top so you have a sturdy double layer.
- Cut the buttered double sheet lengthwise into three strips, spoon a heaped tablespoon of filling at the base of each strip, then fold up into neat triangles flag-style and place seam-side down on a lined tray.
- Repeat with the remaining phyllo and filling, brushing the tops of the finished triangles with any leftover butter so they crisp and colour evenly.
- Bake in an oven preheated to 190C for 22 to 28 minutes until the pastry is deep golden and crisp and the filling is set, then cool for 5 minutes so the cheese firms up before serving warm.
