Egg Curry

How to make it
- Place the eggs in a pan of cold water, bring to a boil and cook for 9 to 10 minutes, then cool under cold running water, peel and set aside.
- Prick each peeled egg lightly with a fork, then shallow-fry them in the hot oil with the turmeric and half a teaspoon of the chili powder for 2 to 3 minutes until golden and blistered, and remove.
- In the same oil fry the finely chopped onion for 8 to 10 minutes until well browned, then add the ginger garlic paste and sliced green chili and cook for a further minute.
- Add the pureed tomatoes with the remaining chili powder, the cumin and the coriander, season with salt and cook for 10 to 12 minutes until thick and the oil separates from the masala.
- Pour in about 250 ml of hot water to make a gravy, bring to a simmer, then halve the fried eggs and slip them in yolk-side up to warm through for 4 to 5 minutes.
- Stir in the garam masala, simmer for another minute so the flavours meld, then check the seasoning and finish with chopped fresh coriander before serving with rice or roti.
