How to make it
- Trim the lamb and cut into large 4 cm chunks, then pat dry so it browns rather than steams.
- Heat the ghee in a heavy pot and gently fry the cardamom, cloves, cinnamon and bay leaves for 30 seconds until aromatic, then add finely chopped onions and cook for 10 to 12 minutes until soft and pale gold.
- Stir in crushed garlic and grated fresh ginger, cook for 2 minutes, then add the lamb and sear over medium-high heat until lightly coloured on all sides.
- Lower the heat, add the kashmiri chilli powder, ground fennel and ground ginger, stir for a minute, then whisk in the yogurt a spoonful at a time so it does not split.
- Pour in just enough hot water to half-cover the meat, season with salt, cover and simmer very gently for 75 to 90 minutes, stirring occasionally, until the lamb is fork-tender and the oil rises to the surface.
- Uncover and reduce the sauce to a glossy, clinging gravy, check the seasoning, and rest off the heat for 5 minutes before serving with rice or naan.
