How to make it
- Heat the olive oil in a 24 cm ovenproof non-stick skillet over medium heat and soften the sliced onion for 4 minutes until translucent.
- Add the diced courgette and bell pepper and cook for 6 to 7 minutes until just tender, then stir in the halved cherry tomatoes for the final minute.
- Whisk the eggs with the milk, parmesan, a good pinch of salt and plenty of black pepper until evenly blended and slightly frothy.
- Pour the egg mixture over the vegetables, scatter in torn basil, and let it set undisturbed over low heat for 5 to 6 minutes until the edges firm up.
- Slide the skillet under a hot grill or into a 190C oven for 6 to 8 minutes until the centre is fully set and no longer wobbly.
- Rest for 3 minutes, loosen the edges, slide onto a board and cut into wedges to serve warm or at room temperature.
