How to make it

  1. Slice the red onion thinly and soak it in cold water with a pinch of salt for 10 minutes, then drain well to soften its bite.
  2. Dice the tomatoes and queso fresco into even small cubes, finely slice the fresh aji amarillo with seeds removed, and roughly chop the parsley.
  3. In a large bowl combine the drained lima beans, corn kernels, tomato, cheese, drained onion, sliced aji, and pitted olives.
  4. Whisk together the olive oil, red wine vinegar, lime juice, salt, and pepper, then pour the dressing over the salad and toss gently to keep the cheese cubes intact.
  5. Let the solterito rest for 10 minutes so the flavors meld, then taste and adjust the acidity and salt before serving at room temperature or lightly chilled.
