How to make it
- Slice the red onion thinly and soak it in cold water with a pinch of salt for 10 minutes, then drain well to soften its bite.
- Dice the tomatoes and queso fresco into even small cubes, finely slice the fresh aji amarillo with seeds removed, and roughly chop the parsley.
- In a large bowl combine the drained lima beans, corn kernels, tomato, cheese, drained onion, sliced aji, and pitted olives.
