How to make it

  1. Scale the sardines and gut them if they have not been cleaned, rinse under cold water, then pat thoroughly dry and lay them in a single layer on a tray.
  2. Bury the sardines generously in coarse sea salt on both sides and let them sit for 30 to 45 minutes so the salt firms the flesh, then brush off the excess just before cooking.
  3. Heat a charcoal grill or griddle until very hot, and char the bell pepper whole alongside, turning until blackened and soft.
  4. Grill the sardines for about 3 to 4 minutes per side, turning once, until the skin blisters and chars and the flesh near the backbone is fully opaque and pulls easily from the bone.
  5. Rest the cooked sardines briefly while you toast the bread on the grill and drizzle it with olive oil.
  6. Serve the sardines hot with the grilled pepper, plenty of lemon wedges to squeeze over, a scatter of parsley, and a final drizzle of olive oil.
