How to make it

  1. Bring the water with the salt to a rolling boil, tip in the flour all at once, and stir vigorously off the heat with a wooden spoon until it forms a smooth, thick dough that pulls away from the pan, then let it rest for 10 minutes.
  2. Spoon the warm dough into a piping bag fitted with a large star nozzle, which gives the ridges that help the churros cook through and stay crisp.
  3. Heat the frying oil to 190°C, then pipe 10 cm lengths of dough directly into the oil, snipping each with scissors and frying 4 or 5 at a time.
  4. Fry the churros for 2 to 3 minutes, turning once, until deep golden and crisp, then lift onto kitchen paper and roll in caster sugar while still hot.
  5. For the chocolate, whisk the cornflour into a splash of the cold milk, then heat the rest of the milk with the chopped chocolate until melted and smooth.
  6. Whisk in the cornflour slurry and simmer gently for 2 to 3 minutes until the chocolate thickens to a pourable, dippable sauce, then serve hot alongside the churros.
