How to make it

  1. Warm the olive oil in a wide frying pan over medium heat, add the finely chopped onion and sliced green peppers, and cook for about 6 minutes until soft and beginning to colour.
  2. Stir in the tomato paste, paprika and red pepper flakes and fry for 1 minute until fragrant, then add the canned tomatoes and a pinch of salt.
  3. Simmer the tomato mixture for 8 to 10 minutes, stirring occasionally, until it thickens and most of the liquid has cooked off.
  4. Lightly beat the eggs with a little salt and pepper, then pour them over the tomato base and let them sit for a few seconds before gently stirring.
  5. Cook over low heat, folding slowly, for about 3 minutes until the eggs are just set into soft creamy curds but still glossy and not dry.
  6. Scatter over the chopped parsley and serve straight from the pan with plenty of crusty bread.
