How to make it

  1. Cut the aubergine, courgette and potatoes into bite-sized chunks and the peppers into large pieces, salting the aubergine and resting it for 15 minutes to draw out bitterness, then pat dry.
  2. Heat the sunflower oil in a deep pan and fry the vegetables in batches until golden and tender, starting with the potatoes and finishing with the quick-cooking peppers, then drain everything on paper towels.
  3. For the sauce, soften two grated tomatoes and one minced garlic clove in the olive oil, stir in the tomato paste and a splash of water and simmer for 8 to 10 minutes until thick and glossy, then season.
  4. Beat the remaining crushed garlic into the yogurt with a pinch of salt to make a tangy garlic yogurt.
  5. Arrange the fried vegetables on a serving platter, spoon the garlic yogurt generously over the middle and ladle the warm tomato sauce on top.
  6. Warm a little olive oil with the dried mint until fragrant and drizzle it over the dish, then serve warm or at room temperature with bread.
