How to make it

  1. Season the beef and tripe with half the chopped onion, one seasoning cube, and a little salt, add 1 cup of water, and boil for 30 to 40 minutes until the meat is tender and fully cooked through.
  2. Soak the dried panla fish in warm water for 10 minutes, then rinse, debone, and set aside.
  3. Pour the palm nut concentrate into a pot with the remaining 3 cups of water and bring to a gentle boil, stirring to dissolve the concentrate into a smooth, even sauce.
  4. Add the cooked meat along with its stock, the deboned panla fish, blended scotch bonnet, remaining onion, ground crayfish, banga spice, and the second seasoning cube.
  5. Simmer uncovered over medium heat for 20 to 25 minutes, stirring occasionally, until the oil rises to the surface and the soup thickens to a rich, glossy consistency.
  6. Taste and adjust with salt and extra spice as needed, then simmer a final 5 minutes to let the flavours meld.
  7. Serve hot with starch, pounded yam, or fufu.
