Banga Soup

How to make it
- Season the beef and tripe with half the chopped onion, one seasoning cube, and a little salt, add 1 cup of water, and boil for 30 to 40 minutes until the meat is tender and fully cooked through.
- Soak the dried panla fish in warm water for 10 minutes, then rinse, debone, and set aside.
- Pour the palm nut concentrate into a pot with the remaining 3 cups of water and bring to a gentle boil, stirring to dissolve the concentrate into a smooth, even sauce.
- Add the cooked meat along with its stock, the deboned panla fish, blended scotch bonnet, remaining onion, ground crayfish, banga spice, and the second seasoning cube.
- Simmer uncovered over medium heat for 20 to 25 minutes, stirring occasionally, until the oil rises to the surface and the soup thickens to a rich, glossy consistency.
- Taste and adjust with salt and extra spice as needed, then simmer a final 5 minutes to let the flavours meld.
- Serve hot with starch, pounded yam, or fufu.
