Goulash Soup

How to make it
- Heat the oil in a large heavy pot and sweat the chopped onions over medium-low heat for about 10 minutes until soft and lightly golden.
- Remove the pot from the direct heat, stir in both the sweet and hot paprika quickly so they do not scorch and turn bitter, then return it to the heat.
- Add the beef cubes, garlic, caraway seeds and thyme, and stir for a few minutes to coat the meat and seal the surfaces.
- Stir in the tomato paste, then pour in the beef stock, bring to a simmer and cook gently covered for about 1 hour until the beef begins to turn tender.
- Add the diced potatoes and red bell pepper and continue simmering uncovered for another 25 to 30 minutes until the potatoes are soft and the broth has thickened.
- Season with salt and pepper to taste, mashing a few potato pieces against the side of the pot to lightly thicken the soup.
- Let the goulash rest for 5 minutes off the heat, then ladle into bowls and serve hot with crusty bread.
