How to make it

  1. Heat the oil in a large heavy pot and sweat the chopped onions over medium-low heat for about 10 minutes until soft and lightly golden.
  2. Remove the pot from the direct heat, stir in both the sweet and hot paprika quickly so they do not scorch and turn bitter, then return it to the heat.
  3. Add the beef cubes, garlic, caraway seeds and thyme, and stir for a few minutes to coat the meat and seal the surfaces.
  4. Stir in the tomato paste, then pour in the beef stock, bring to a simmer and cook gently covered for about 1 hour until the beef begins to turn tender.
  5. Add the diced potatoes and red bell pepper and continue simmering uncovered for another 25 to 30 minutes until the potatoes are soft and the broth has thickened.
  6. Season with salt and pepper to taste, mashing a few potato pieces against the side of the pot to lightly thicken the soup.
  7. Let the goulash rest for 5 minutes off the heat, then ladle into bowls and serve hot with crusty bread.
