How to make it
- Heat the oil in a large frying pan over medium heat and cook the onion for 4 to 5 minutes until soft, then add the garlic and cook for another minute.
- Add the ground beef, breaking it up with a spoon, and cook until well browned with no pink remaining and an internal temperature of at least 71 C (160 F), then drain off any excess fat.
- Stir in the cumin and chili powder with a splash of water, season with salt and pepper, and simmer for 5 minutes until the mixture is thick and well coated in spice.
- Warm the taco shells or tortillas in a dry pan or in the oven according to the packet so they are pliable and lightly toasted.
- Prepare the toppings by setting out the shredded cheese, diced tomatoes, sliced black olives, shredded spinach and chopped cilantro in separate bowls.
- Spoon the seasoned beef into each shell, then top with cheese, tomatoes, olives, spinach and cilantro.
- Finish each taco with a spoonful of sour cream and serve straight away while the shells are still warm and crisp.
