How to make it

  1. Heat the oil in a large frying pan over medium heat and cook the onion for 4 to 5 minutes until soft, then add the garlic and cook for another minute.
  2. Add the ground beef, breaking it up with a spoon, and cook until well browned with no pink remaining and an internal temperature of at least 71 C (160 F), then drain off any excess fat.
  3. Stir in the cumin and chili powder with a splash of water, season with salt and pepper, and simmer for 5 minutes until the mixture is thick and well coated in spice.
  4. Warm the taco shells or tortillas in a dry pan or in the oven according to the packet so they are pliable and lightly toasted.
  5. Prepare the toppings by setting out the shredded cheese, diced tomatoes, sliced black olives, shredded spinach and chopped cilantro in separate bowls.
  6. Spoon the seasoned beef into each shell, then top with cheese, tomatoes, olives, spinach and cilantro.
  7. Finish each taco with a spoonful of sour cream and serve straight away while the shells are still warm and crisp.
