How to make it

  1. In a large bowl, gently combine the ground beef, ground lamb, egg, rolled oats, minced garlic, dijon mustard, ground cumin, salt and pepper, mixing just until evenly blended without overworking the meat.
  2. Divide the mixture into 4 equal portions and shape each into a patty about 2 cm thick, pressing a shallow dimple into the center of each so they stay flat while cooking.
  3. Heat the grapeseed oil in a heavy skillet or grill pan over medium-high heat until shimmering.
  4. Cook the patties for about 4 to 5 minutes per side, flipping once, until well browned and cooked through to an internal temperature of 160 F (71 C).
  5. Lay a slice of cheddar on each patty during the last minute of cooking and cover loosely so it melts.
  6. Meanwhile, toast the cut sides of the buns in the same pan or under the broiler until lightly golden.
  7. Build each burger on a toasted bun with lettuce, tomato and onion to taste, and serve hot.
