Ager Soup

How to make it

  1. Season the beef with the chopped onion, one crumbled seasoning cube and a little salt, then place it in a pot with just enough water to cover and simmer until tender and fully cooked through to a safe internal temperature of at least 71 C (160 F), about 30 to 40 minutes; reserve the stock.
  2. Soak the dried fish in warm water for a few minutes, then rinse it well, remove any bones and break it into chunks.
  3. Pour the palm oil into a separate pot over low heat, add the ground agbono and stir constantly for about 2 minutes to toast it lightly and let it dissolve into the oil.
  4. Gradually add the reserved beef stock to the agbono, stirring continuously to prevent lumps, until you have a thick, slightly stretchy base.
  5. Add the cooked beef, dried fish, ground crayfish, chili pepper and the remaining seasoning cube, then simmer gently for about 10 to 15 minutes, stirring often so the soup does not stick or scorch.
  6. Stir in the washed and chopped ugu leaves and cook for a further 5 minutes until they wilt and soften.
  7. Taste and adjust the salt and pepper, then serve hot alongside a swallow such as pounded yam or fufu.
