How to make it

  1. Place the catfish steaks in a bowl, sprinkle with a little salt, and rinse under running water, rubbing gently to remove the slippery film, then drain and set aside.
  2. Peel and roughly chop the onion, garlic, and ginger; blend half of the onion with the garlic, ginger, and habanero into a smooth paste and finely slice the remaining onion.
  3. Bring the water to a boil in a wide pot, then add the blended paste, sliced onion, ground ehu seeds, pepper soup spice, and crumbled seasoning cubes, and simmer for 5 minutes so the broth becomes fragrant.
  4. Lower the fish steaks gently into the simmering broth in a single layer, cover, and cook over medium heat for about 12 to 15 minutes until the flesh is opaque and flakes easily, reaching at least 63 C / 145 F internally.
  5. Avoid stirring vigorously so the delicate fish does not break apart; instead shake the pot occasionally and taste the broth, adjusting salt and pepper as needed.
  6. Tear the scent leaves or parsley over the soup, simmer for one more minute, then turn off the heat and serve the pepper soup hot in deep bowls, on its own or with boiled yam or rice.
