Barbecue Wings

How to make it
- If you are grilling, soak the hickory wood chips in water for at least 30 minutes; meanwhile pat the chicken wings thoroughly dry with paper towels.
- In a large bowl, toss the wings with the oil, paprika, lemon pepper, cayenne, black pepper and a good pinch of salt until evenly coated.
- Set up a grill for indirect medium heat, around 180C, and drain and scatter the soaked hickory chips over the coals or into a smoker box for a smoky aroma.
- Arrange the wings skin-side up on the cooler side of the grill, cover, and cook for about 25 to 30 minutes, turning once, until the skin is crisp and rendered.
- Brush the wings generously with barbecue sauce and move them over direct heat for 3 to 5 minutes per side, watching closely so the sugars caramelise without burning.
- Check that the thickest wing reaches an internal temperature of at least 74C, then transfer to a platter.
- Brush with a final coat of barbecue sauce, let the wings rest for 5 minutes, and serve warm.
