How to make it

  1. If you are grilling, soak the hickory wood chips in water for at least 30 minutes; meanwhile pat the chicken wings thoroughly dry with paper towels.
  2. In a large bowl, toss the wings with the oil, paprika, lemon pepper, cayenne, black pepper and a good pinch of salt until evenly coated.
  3. Set up a grill for indirect medium heat, around 180C, and drain and scatter the soaked hickory chips over the coals or into a smoker box for a smoky aroma.
  4. Arrange the wings skin-side up on the cooler side of the grill, cover, and cook for about 25 to 30 minutes, turning once, until the skin is crisp and rendered.
  5. Brush the wings generously with barbecue sauce and move them over direct heat for 3 to 5 minutes per side, watching closely so the sugars caramelise without burning.
  6. Check that the thickest wing reaches an internal temperature of at least 74C, then transfer to a platter.
  7. Brush with a final coat of barbecue sauce, let the wings rest for 5 minutes, and serve warm.
