How to make it

  1. Cut the beef into 1 1/2-inch cubes, pat them dry, season with salt and pepper, and toss in the flour to coat lightly.
  2. Heat the oil in a large heavy casserole or Dutch oven over medium-high heat and brown the beef in batches on all sides, then transfer it to a plate.
  3. Chop the onions, celery, and carrots and mince the garlic, then add them to the same pot and saute over medium heat for about 8 minutes until softened, scraping up the browned bits.
  4. Pour in the stout to deglaze, stirring well, then return the beef to the pot along with the tomato sauce, beef stock, thyme, and bay leaf.
  5. Bring everything to a simmer, then cover and either reduce the heat to low on the stovetop or transfer to a 325 F (160 C) oven.
  6. Cook for 2 to 2 1/2 hours, stirring occasionally, until the beef is fork-tender and the sauce has thickened into a rich gravy.
  7. Discard the bay leaf, taste and adjust the seasoning with salt and pepper, and serve hot with mashed potatoes or crusty bread.
