Beef and Guinness Casserole

How to make it
- Cut the beef into 1 1/2-inch cubes, pat them dry, season with salt and pepper, and toss in the flour to coat lightly.
- Heat the oil in a large heavy casserole or Dutch oven over medium-high heat and brown the beef in batches on all sides, then transfer it to a plate.
- Chop the onions, celery, and carrots and mince the garlic, then add them to the same pot and saute over medium heat for about 8 minutes until softened, scraping up the browned bits.
- Pour in the stout to deglaze, stirring well, then return the beef to the pot along with the tomato sauce, beef stock, thyme, and bay leaf.
- Bring everything to a simmer, then cover and either reduce the heat to low on the stovetop or transfer to a 325 F (160 C) oven.
- Cook for 2 to 2 1/2 hours, stirring occasionally, until the beef is fork-tender and the sauce has thickened into a rich gravy.
- Discard the bay leaf, taste and adjust the seasoning with salt and pepper, and serve hot with mashed potatoes or crusty bread.
