How to make it

  1. In a large bowl whisk together both flours, the yeast, sugar and salt, then add the cold water and 1 tablespoon of the oil and mix to a shaggy dough.
  2. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic, then cover and leave to rise in a warm place for 1 to 1.5 hours until doubled.
  3. Meanwhile, thinly slice the onion and stir-fry it in a hot pan with a little oil until softened, add the sliced beef and cook until fully browned and no longer pink, then stir in 3 tablespoons of yakiniku sauce and cook 1 minute more; set aside.
  4. Knock back the risen dough, divide if needed and roll out on a floured surface into a roughly 30cm round, then transfer to an oiled baking tray or pizza pan.
  5. Preheat the oven to its highest setting, around 240C (475F), brushing the dough rim with the remaining oil.
  6. Spread the remaining 2 tablespoons of yakiniku sauce over the base, scatter over most of the mozzarella, then top evenly with the beef and onion mixture and the last of the cheese.
  7. Bake for 10 to 12 minutes until the crust is golden and crisp and the cheese is bubbling.
  8. Scatter with sliced spring onions and toasted sesame seeds, then slice and serve hot.
