How to make it
- In a large bowl whisk together both flours, the yeast, sugar and salt, then add the cold water and 1 tablespoon of the oil and mix to a shaggy dough.
- Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic, then cover and leave to rise in a warm place for 1 to 1.5 hours until doubled.
- Meanwhile, thinly slice the onion and stir-fry it in a hot pan with a little oil until softened, add the sliced beef and cook until fully browned and no longer pink, then stir in 3 tablespoons of yakiniku sauce and cook 1 minute more; set aside.
- Knock back the risen dough, divide if needed and roll out on a floured surface into a roughly 30cm round, then transfer to an oiled baking tray or pizza pan.
- Preheat the oven to its highest setting, around 240C (475F), brushing the dough rim with the remaining oil.
- Spread the remaining 2 tablespoons of yakiniku sauce over the base, scatter over most of the mozzarella, then top evenly with the beef and onion mixture and the last of the cheese.
- Bake for 10 to 12 minutes until the crust is golden and crisp and the cheese is bubbling.
- Scatter with sliced spring onions and toasted sesame seeds, then slice and serve hot.
