Bell Pepper Chili

How to make it
- Heat the olive oil in a large heavy pot over medium-high heat, add the ground beef and brown it well, breaking up the lumps, until no pink remains and the meat is fully cooked to at least 71 C (160 F).
- Push the meat to one side, add the chopped onions and diced bell peppers and cook for 6 to 8 minutes until softened, then stir in the garlic and cook for another minute until fragrant.
- Sprinkle in the chili powder, cumin and garlic salt and stir for about 1 minute to toast the spices and coat the meat and vegetables.
- Pour in the crushed tomatoes and beef stock, scraping up any browned bits from the bottom of the pot, and bring the chili to a gentle simmer.
- Stir in the kidney beans, then reduce the heat to low and simmer uncovered for 30 to 40 minutes, stirring occasionally, until the chili has thickened and the flavours have melded.
- Taste and adjust with more chili powder, salt or black pepper as needed.
- Spoon the hot chili over bowls of cooked white rice and serve.
