How to make it

  1. Bring a large pot of salted water to a boil, add the spaghetti, and cook until al dente according to the package timing, then drain and reserve a cup of the pasta water.
  2. While the pasta cooks, cut the chicken breast into thin strips and season with salt and a little of the black pepper.
  3. Heat the oil in a large skillet over medium-high heat and cook the chicken for 5 to 6 minutes, turning, until golden and cooked through to an internal temperature of 74 C (165 F), then set aside.
  4. In the same skillet, add the minced garlic and sliced onion and cook for 2 minutes, then add the sliced green and red capsicum and stir-fry for another 3 minutes until just tender.
  5. Return the chicken to the pan, pour in the cream, and add the remaining black pepper, stirring to combine into a loose sauce.
  6. Add the drained spaghetti and toss to coat, loosening the sauce with a splash of reserved pasta water if needed.
  7. Stir in the grated parmesan, taste and adjust the salt and pepper, and serve hot with an extra crack of black pepper on top.
