How to make it

  1. In a bowl, toss the sliced chicken with 1 tablespoon of the soy sauce and the powdered ginger, then let it marinate for 10 minutes.
  2. Whisk the remaining soy sauce with the chicken broth and cornstarch in a small bowl and set the sauce aside.
  3. Blanch the broccoli florets in boiling salted water for 2 minutes, then drain and rinse under cold water to keep them bright green and crisp.
  4. Heat 1 tablespoon of the oil in a wok or large skillet over high heat, add the chicken in a single layer and stir-fry until golden and cooked through to an internal temperature of 74C (165F), about 5 minutes, then remove to a plate.
  5. Add the remaining oil to the pan with the garlic and stir-fry for 20 seconds, then add the broccoli and toss for 1 to 2 minutes.
  6. Return the chicken to the pan, pour in the sauce and stir until it bubbles and thickens enough to coat everything, about 1 minute.
  7. Sprinkle with the sesame seeds and serve immediately over rice or noodles.
