Brown Windsor Soup

How to make it
- Trim and cut the lamb shoulder and stewing beef into small 2 cm cubes, then pat the pieces dry with paper towels.
- Melt the butter in a large heavy pot over medium-high heat, add the meat, and brown it well on all sides for about 6 to 8 minutes, then lift it out to a plate.
- Finely dice the onion, carrot, and celery, add them to the same pot, and cook gently for 6 to 7 minutes until softened and lightly coloured.
- Stir in the flour and cook for 2 minutes to make a roux, then gradually pour in the beef stock while whisking to keep it smooth.
- Return the meat to the pot, add the bouquet garni, season lightly, bring to a simmer, then cover and cook gently for about 1.5 hours until the meat is very tender.
- Remove and discard the bouquet garni, then blend the soup until completely smooth using a stick blender or in batches in a jug blender.
- Return the soup to the pot, stir in the madeira, reheat gently without boiling, taste and adjust the seasoning, then serve hot.
