How to make it
- If the chicken breasts are thick, slice them horizontally or pound them to an even thickness of about 2 cm so they cook through evenly, then season with salt and pepper.
- Soak the chicken in the milk for at least 15 minutes, then dredge each piece thoroughly in the seasoned flour, pressing so the coating adheres well.
- Heat the oil in a deep heavy pan to 175 C (350 F), then fry the chicken in batches for 5 to 7 minutes, turning once, until golden, crisp and cooked through to an internal temperature of 74 C (165 F).
- Drain the fried chicken on a wire rack or paper towels for a minute so it stays crisp.
- Gently warm the hot sauce and butter together in a small pan until the butter melts, then toss the hot fried chicken in the sauce to coat completely.
- Lightly toast the cut sides of the buns, then build each sandwich with lettuce, a slice of tomato and a piece of buffalo chicken, and serve immediately while hot and crisp.
