California Curry Chicken

How to make it
- Cut the boneless chicken thighs into bite-sized chunks and peel and halve the small potatoes so they cook evenly.
- Heat the cooking oil in a large heavy pot over medium-high heat and brown the chicken pieces in batches until golden on the outside, then transfer them to a plate.
- Lower the heat to medium, add the diced onions and cook for 6 to 8 minutes until soft and translucent, then stir in the minced garlic, curry powder, chile powder and paprika and cook for 1 minute until fragrant.
- Return the chicken to the pot along with the potatoes, pour in the chicken stock, and bring to a gentle boil.
- Reduce to a simmer, cover and cook for about 25 minutes until the potatoes are tender and the chicken is cooked through to an internal temperature of 74C.
- Stir in the coconut milk and simmer uncovered for a further 5 minutes to thicken the sauce, then season with salt to taste.
- Scatter with fresh cilantro and serve hot over steamed rice.
