How to make it

  1. Cut the boneless chicken thighs into bite-sized chunks and peel and halve the small potatoes so they cook evenly.
  2. Heat the cooking oil in a large heavy pot over medium-high heat and brown the chicken pieces in batches until golden on the outside, then transfer them to a plate.
  3. Lower the heat to medium, add the diced onions and cook for 6 to 8 minutes until soft and translucent, then stir in the minced garlic, curry powder, chile powder and paprika and cook for 1 minute until fragrant.
  4. Return the chicken to the pot along with the potatoes, pour in the chicken stock, and bring to a gentle boil.
  5. Reduce to a simmer, cover and cook for about 25 minutes until the potatoes are tender and the chicken is cooked through to an internal temperature of 74C.
  6. Stir in the coconut milk and simmer uncovered for a further 5 minutes to thicken the sauce, then season with salt to taste.
  7. Scatter with fresh cilantro and serve hot over steamed rice.
