Chili Colorado

How to make it
- Stem and seed the dried chiles, toast them in a dry pan for about 30 seconds per side until fragrant, then soak them in the hot water for 20 minutes until softened.
- Blend the soaked chiles with their soaking water, two cloves of garlic and a pinch of salt until completely smooth, then strain the sauce through a sieve to remove any skins.
- Cut the beef chuck into 3 cm cubes, pat dry and season well with salt and pepper, then toss with the flour to coat lightly.
- Heat the olive oil in a heavy pot over medium-high heat and brown the beef in batches on all sides, about 6 to 8 minutes per batch, then set aside.
- Lower the heat, add the chopped onion and remaining garlic and cook for 5 minutes until soft, then stir in the cumin and oregano for 1 minute.
- Return the beef to the pot, pour in the chile sauce and the beef broth, and bring to a gentle simmer.
- Cover and simmer over low heat for 2 to 2.5 hours, stirring occasionally, until the beef is fork-tender and the sauce has thickened to a rich gravy, then adjust the seasoning and serve.
