Beef and Broccoli

How to make it
- Slice the steak thinly against the grain, then toss with 1 tbsp soy sauce, the Shaoxing wine and 1 tbsp cornflour and leave to marinate for 15 minutes.
- Stir together the remaining soy sauce, oyster sauce, sugar, sesame oil, the rest of the cornflour and the water to make a smooth sauce, and set aside.
- Blanch the broccoli florets in boiling water for 90 seconds, then drain well so they stay bright green and crisp-tender.
- Heat 2 tbsp oil in a wok over high heat and sear the beef in a single layer for 1 to 2 minutes until just browned and cooked through, then remove to a plate.
- Add the last tbsp of oil and stir-fry the garlic and ginger for 20 seconds until fragrant, then return the beef and broccoli to the wok.
- Pour in the sauce and toss everything for 1 to 2 minutes until it thickens and coats the beef and broccoli in a glossy glaze, then serve over rice.
