How to make it

  1. Slice the steak thinly against the grain, then toss with 1 tbsp soy sauce, the Shaoxing wine and 1 tbsp cornflour and leave to marinate for 15 minutes.
  2. Stir together the remaining soy sauce, oyster sauce, sugar, sesame oil, the rest of the cornflour and the water to make a smooth sauce, and set aside.
  3. Blanch the broccoli florets in boiling water for 90 seconds, then drain well so they stay bright green and crisp-tender.
  4. Heat 2 tbsp oil in a wok over high heat and sear the beef in a single layer for 1 to 2 minutes until just browned and cooked through, then remove to a plate.
  5. Add the last tbsp of oil and stir-fry the garlic and ginger for 20 seconds until fragrant, then return the beef and broccoli to the wok.
  6. Pour in the sauce and toss everything for 1 to 2 minutes until it thickens and coats the beef and broccoli in a glossy glaze, then serve over rice.
