How to make it
- Preheat the oven according to the chip package, usually 220C (425F), and spread the oven chips in a single layer on a baking tray.
- Drizzle the chips with the vegetable oil, toss to coat, and bake until deep golden and crisp, about 20 to 25 minutes, turning once halfway through.
- While the chips bake, melt the butter in a saucepan over medium heat, then whisk in the flour and cook for 1 to 2 minutes to form a pale roux without letting it brown.
- Gradually whisk in the beef broth a little at a time, keeping the mixture smooth, then bring to a gentle simmer and cook for 3 to 5 minutes until the gravy thickens enough to coat the back of a spoon.
- Season the gravy with the black pepper and salt to taste, then keep it warm over low heat.
- Pile the hot chips onto serving plates or into a shallow dish and scatter the grated cheddar generously over the top so it begins to melt from the heat of the chips.
- Ladle the hot beef gravy over the cheese and chips and serve immediately while everything is hot and the cheese is melting.
